If you&rsquo;re looking for a substitute, I&rsquo;d recommend using a 50-50 mix of rolled oats and quick oats. Save the steel-cut oats for my <a href=\"https:\/\/thealmondeater.com\/cheesy-savory-oatmeal-breakfast-bowl\/\">savory oatmeal breakfast bowl<\/a>, as they&rsquo;re too hearty for this recipe.<\/p>\n\n\n\n<p><strong>Spices<\/strong> &ndash; A good pinch of cinnamon and pumpkin pie spice gives these oats their cozy pumpkin pie flavors.<\/p>\n\n\n\n<p><strong>Pumpkin puree<\/strong> &ndash; Remember to use plain pumpkin puree, NOT pumpkin pie mix. Your oats will be way too sweet and overly spiced if you mix these two up.<\/p>\n\n\n\n<p><strong>Protein powder<\/strong> &ndash; This is optional, but I like adding 1 scoop of vanilla protein powder to make these oats that much more filling. They&rsquo;re still satisfying without, though!<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-variations\">Variations<\/h3>\n<\/div>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nut-free option<\/strong> &ndash; Omit the walnuts\/pecans or replace them with pumpkin seeds.<\/li>\n\n\n\n<li><strong>Gluten-free option<\/strong> &ndash; Use certified gluten-free rolled oats if you need this recipe to be gluten-free.<\/li>\n\n\n\n<li><strong>Dairy-free option<\/strong> &ndash; Swap the milk for your favorite plant milk and use non-dairy chocolate chips for dairy-free overnight oats.<\/li>\n\n\n\n<li><strong>Add yogurt<\/strong> &ndash; Stir in 1 to 2 tablespoons of plain yogurt for extra creamy overnight oats.<\/li>\n\n\n\n<li><strong>Mix-in ideas<\/strong> &ndash; Walnuts, pecans, chocolate chips, pumpkin seeds, chia seeds, vanilla extract, hemp seeds, or a dollop of nut butter would all taste amazing mixed in with the oats!<\/li>\n<\/ul>\n<\/div>\n\n\n\n<div class=\"wp-block-group is-layout-constrained wp-block-group-is-layout-constrained\">\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-pumpkin-overnight-oats\">How to Make Pumpkin Overnight Oats<\/h2>\n\n\n\n<p><strong>Step 1: Combine.<\/strong> Stir the oats, cinnamon, and pumpkin pie spice together in a large bowl.<\/p>\n\n\n\n<p><strong>Step 2: Blend.<\/strong> Blend the milk, pumpkin, maple syrup, and protein powder until smooth. Pour the pumpkin milk mixture into the bowl with the oats and stir to combine.
