In fact, it&#8217;s one of my stepdad&#8217;s favorite desserts! Here&#8217;s why:&nbsp;<\/p>\n\n\n\n<p><strong>Creamy:<\/strong> It has a creamy cheesecake filling made with cream cheese and homemade whipped cream.&nbsp;<\/p>\n\n\n\n<p><strong>Simple:<\/strong> Made using 6 simple ingredients, so it&#8217;s truly a no-fuss dessert recipe (that also happens to require zero baking!).<\/p>\n\n\n\n<p><strong>Light:<\/strong> Though this is a cheesecake, it&#8217;s surprisingly light compared to traditional cheesecake.<\/p>\n\n<\/div>\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1200\" height=\"1800\" data-pin-nopin=\"true\" src=\"https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3.jpg\" alt=\"a whole pie in a pie pan topped with cherry pie filling\" class=\"wp-image-125208\" srcset=\"https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3.jpg 1200w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-333x500.jpg 333w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-683x1024.jpg 683w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-768x1152.jpg 768w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-1024x1536.jpg 1024w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-400x600.jpg 400w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2025\/07\/no-bake-cherry-cheesecake_web-3-150x225.jpg 150w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n\n\n\n<p><strong>Graham cracker crust &#8211;<\/strong> Homemade or store-bought, just make sure if you use store-bought that it&#8217;s a 9 inch crust.&nbsp;<\/p>\n\n\n\n<p><strong>Cream cheese &#8211;<\/strong> Full fat cream cheese is the way to go, and soften it to room temperature before incorporating it.&nbsp;<\/p>\n\n\n\n<p><strong>Powdered sugar &#8211;<\/strong> I originally tested this using cane sugar but ended up preferring the powdered sugar because I think it helps hold the pie together better.&nbsp;<\/p>\n\n\n\n<p><strong>Vanilla extract &#8211;<\/strong> Gives the pie filling more flavor!&nbsp;<\/p>\n\n\n\n<p><strong>Heavy whipping cream &#8211;<\/strong> No substitution; I haven&#8217;t tested this with half and half or coconut milk or anything other than heavy cream.&nbsp;<\/p>\n\n\n\n<p><strong>Cherry pie filling &#8211;<\/strong> Make sure the cherry filling has actual whole cherries in it! Some of them are more like cherry jam, which we don&#8217;t want.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-instructions\">Instructions<\/h2>\n\n\n\n<p><strong>Step 1: Prepare the crust.<\/strong> If you&#8217;re using a store-bought crust, skip this step. Otherwise, follow the steps in my <a href=\"https:\/\/thealmondeater.com\/vegan-key-lime-pie\/\">vegan key lime pie recipe<\/a> for how to make a homemade graham cracker crust.<\/p>\n\n\n\n<p><strong>Step 2: Make the cream cheese filling.<\/strong> Next, cream the softened cream cheese, powdered sugar and vanilla together until smooth.&nbsp;<\/p>\n\n\n\n<p><strong>Step 3: Whip the cream.<\/strong> In a separate bowl, add the heavy cream. Mix with a hand mixer (or stand mixer) on low speed for 1-2 minutes, then medium speed for 1-2 minutes and lastly, on high speed for 1 minute until stiff peaks form. Slice and enjoy!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tips-amp-faqs\">Tips &amp; FAQs<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>To make a homemade graham cracker crust:<\/strong> Blend whole graham crackers and melted butter together until the mixture can easily be pinched between your fingers. You don&#8217;t want it to be too wet, but you do want it to hold together.&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Do NOT mix<\/strong> the cream cheese and whipped cream together with an electric mixer. Otherwise, the filling won&#8217;t solidify in the fridge. Instead, gently fold them together with a rubber spatula or large spoon.<\/li>\n<\/ul>\n\n\n<div class=\"block-tip cwp-inner\">\n\n<p class=\"block-tip__subtitle\">My Pro Tip<\/p>\n\n\n\n<h2 class=\"wp-block-heading block-tip__title\">Recipe Tip<\/h2>\n\n\n\n<p>Quickly soften the cream cheese by unwrapping it, then placing it on a microwave-safe dish and microwaving for 12-15 seconds. <\/p>\n\n<\/div>\n\n\n<div class=\"schema-faq wp-block-yoast-faq-block\"><div class=\"schema-faq-section\" id=\"faq-question-1753277847122\"><strong class=\"schema-faq-question\">Do I have to use canned cherries?\u00a0<\/strong> <p class=\"schema-faq-answer\">No, you can definitely use fresh cherries if you prefer (both taste delicious!). However, if you want the cherry topping to be juicy, you&#8217;ll want to cook down the cherries a bit rather than just putting fresh cherries on top. To do so, add fresh cherries to a saucepan, along with a little sugar and water, and cook until the cherries begin to soften.\u00a0<\/p> <\/div> <div class=\"schema-faq-section\" id=\"faq-question-1753277866915\"><strong class=\"schema-faq-question\">Can I use a different fruit besides cherries?\u00a0<\/strong> <p class=\"schema-faq-answer\">Sure! It probably keeps for longer, but it&#8217;s never lasted more than 4 days in our house \ud83d\ude42&nbsp;<\/p>\n\n\n\n<p><strong>Freezer:<\/strong> You&#8217;ll want to make sure the cheesecake has already set before freezing it. But, once it&#8217;s set, wrap the entire dish in plastic wrap, and then again in foil and freeze for up to 3 months.
