Instead, I prefer super simple recipes like my <a href=\"https:\/\/thealmondeater.com\/vegan-cookie-dough-for-one\/\">edible cookie dough<\/a>, <a href=\"https:\/\/thealmondeater.com\/chickpea-brownies\/\">chickpea brownies<\/a> and of course these creamy cheesecake bars.<\/p>\n\n\n\n<p>These bars are made up of three layers: the graham cracker crust, the cheesecake filling and the strawberry topping. They&#8217;re each delicious on their own, but even better when paired together.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-recipe-features\">Recipe features<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>An almost-classic cheesecake recipe, but in bar form. <\/li><li>The prep time for these bars is only 20 minutes. <\/li><li>Incredibly flavorful, and the texture is smooth and creamy, but with a bit of crunch from the crust.&nbsp;<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"1200\" height=\"1800\" data-pin-nopin=\"true\" src=\"https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6.jpg\" alt=\"a dessert bar on parchment paper topped with strawberries\" class=\"wp-image-111080\" srcset=\"https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6.jpg 1200w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-400x600.jpg 400w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-200x300.jpg 200w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-683x1024.jpg 683w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-768x1152.jpg 768w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-1024x1536.jpg 1024w, https:\/\/thealmondeater.com\/wp-content\/uploads\/2023\/05\/strawberry-cheesecake-bars_web-6-150x225.jpg 150w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p>This list highlights some of the main ingredients; the full ingredient list is below in the recipe card.&nbsp;<\/p>\n\n\n\n<p><strong>Graham crackers &#8211; <\/strong>An absolute must for the crust!&nbsp;<\/p>\n\n\n\n<p><strong>Sugar &#8211; <\/strong>Cane sugar\/granulated sugar is what I used and recommend, but coconut sugar is a fine option if you want these to be less sweet tasting.<\/p>\n\n\n\n<p><strong>Butter &#8211; <\/strong>I used unsalted butter because that&#8217;s what I typically have in my fridge; salted butter works but it will result in saltier tasting bars.<\/p>\n\n\n\n<p><strong>Cream cheese &#8211;<\/strong> Make sure it&#8217;s at room temperature before using it; otherwise, it won&#8217;t incorporate properly with the other filling ingredients.<\/p>\n\n\n\n<p><strong>Yogurt &#8211;<\/strong> I opted to add some Greek yogurt to lighten these up a bit, but also to make the flavor a little more interesting.&nbsp;<\/p>\n\n\n\n<p><strong>Egg &#8211; <\/strong>No substitution; sometimes a flax egg works, but I wouldn&#8217;t use it in these bars.<\/p>\n\n\n\n<p><strong>Strawberries &#8211;<\/strong> Fresh strawberries or frozen strawberries are ok in this recipe (I used fresh).<\/p>\n\n\n\n<p><strong>Lemon juice &#8211;<\/strong> Opt for freshly squeezed rather than bottled juice.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<p><strong>Step 1: Make the crust.<\/strong> Add the graham crackers and sugar to a food processor, then pulse. With the motor running, pour the melted butter in through the top and blend until everything is combined. Last, dollop HALF of the strawberry compote overtop.&nbsp;<\/p>\n\n\n\n<p><strong>Step 5: Bake.<\/strong> Place the baking pan in the oven and bake the bars for 30 minutes. Leave the bars in the pan for 15 minutes before transferring the pan to the refrigerator for at least an hour, allowing the bars to cool completely. Slice and enjoy!&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tips and tricks<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Don&#8217;t forget to line the baking dish with parchment paper! This will ensure that the bars don&#8217;t stick and they&#8217;re easy to remove. <\/li><li>Make sure the cream cheese is truly at room temperature to ensure the cheesecake filling is smooth and creamy and not lumpy. <\/li><li>I only used half of the strawberry topping, but if you want the bars to be extra strawberry-y, you can use all of it. <\/li><li>To get clean cuts, make sure to wipe off your knife in between each cut.&nbsp;<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Do I have to add the strawberry topping?&nbsp;<\/h3>\n\n\n\n<p>Nope! If you&#8217;re not a fan of strawberries but still want to make cheesecake bars, simply follow the recipe as written, but omit the strawberries. Then before serving, you can drizzle them with:&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><a href=\"https:\/\/thealmondeater.com\/healthier-salted-caramel-sauce\/\">Homemade caramel sauce<\/a> <\/li><li>Melted chocolate <\/li><li>Fresh berries <\/li><li>Whipped cream<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Storage<\/h2>\n\n\n\n<p><strong>Refrigerator:<\/strong> Store bars in a sealed container in the fridge for up to 7 days. I recommend putting wax paper in between the layers to the bars don&#8217;t stick to one another.<\/p>\n\n\n\n<p><strong>Freezer:<\/strong> To freeze, wrap each bar individually with plastic wrap, then place them in a freezer-safe bag or container. Store in the freezer for up to 3 months.
