Almond meal will work, but the overall taste and texture will be slightly different.&nbsp;<\/p>\n\n\n\n<p><strong>Cocoa powder &#8211; <\/strong>A must-have for almost all chocolate recipes.<\/p>\n\n\n\n<p><strong>Chocolate chips &#8211;<\/strong> I used semi-sweet, but dark chocolate chips will work too.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-instructions\">Instructions<\/h2>\n\n\n\n<p><strong>Cream the butter and sugars.<\/strong> Start by placing the softened butter into a large mixing bowl, then pour in the brown sugar and cane sugar. Use a stand mixer or hand mixer to cream them together, then add in the egg and vanilla and stir to combine.<\/p>\n\n\n\n<p><strong>Mix the dry ingredients. <\/strong>In a separate bowl, stir the almond flour, cocoa powder, baking soda, and salt together.&nbsp;<\/p>\n\n\n\n<p><strong>Combine.<\/strong> Pour the dry ingredients into the wet and whisk to combine. Immediately remove the baking sheet from the oven and drop it onto your stovetop a few times to flatten the cookies out.&nbsp;<\/p>\n\n\n\n<p>Leave the cookies on the baking sheet for a few minutes before carefully transferring them to a wire rack. Sprinkle with a little flakey sea salt before eating (optional, but highly recommend!).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tips-and-faqs\">Tips and FAQs&nbsp;<\/h2>\n\n\n\n<p><strong>To quickly soften butter:<\/strong> I never remember to take the butter out of the refrigerator ahead of time. Instead, place the stick of butter on a small plate and microwave it for approximately 15 seconds, until you can easily press your finger down into it.&nbsp;<\/p>\n\n\n\n<p><strong>Use a cookie scoop: <\/strong>Truthfully, I don&#8217;t own a cookie scoop (I know, I know, who am I?), but if you want the cookies to be even in size, a cookie scoop is the way to go. Otherwise, using your hands is fine.&nbsp;<\/p>\n\n\n\n<p><strong>Pan-banging technique:<\/strong> If you want a cookie with slightly crunchy edges and a soft middle, this is the way to do it! (NOTE: since these cookies are gluten free, the texture won&#8217;t be exactly the same as traditional cookies). To do this, remove the baking sheet with the baked almond flour cookies from the oven and lift it 1-2 inches above your stovetop, then drop it onto the stove. To this a few times, which will flatten the cookies out.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-is-there-a-way-to-make-these-cookies-healthy\">Is there a way to make these cookies healthy?&nbsp;<\/h3>\n\n\n\n<p>I mean&#8230; kind of? I didn&#8217;t develop these cookies with the intention of them being healthy. But, if you want to lighten them up a bit, try using coconut sugar instead of cane\/brown sugar, and use less chocolate chips, which will reduce some of the sweetness.&nbsp;<\/p>\n\n\n\n<p>If you&#8217;re looking for a healthy cookie recipe, try my <a href=\"https:\/\/thealmondeater.com\/ooey-gooey-avocado-cookies\/\">chocolate avocado cookies<\/a> or my <a href=\"https:\/\/thealmondeater.com\/healthy-birthday-cake-cookies\/\">healthy birthday cake cookies<\/a>.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-do-i-have-to-use-almond-flour\">Do I have to use almond flour?<\/h3>\n\n\n\n<p>Yes! This is&nbsp;<em>very<\/em>&nbsp;important. Almond flour cannot be subbed for any other kind of flour, as it&#8217;s its own unique properties and is very different from all purpose flour\/coconut flour\/oat flour\/etc.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-can-i-make-them-vegan\">Can I make them vegan?<\/h3>\n\n\n\n<p>I wouldn&#8217;t! I use eggs in my almond flour recipes to ensure they bake properly.
