You’re going to love these easy Air Fryer Potato Wedges! They’re crispy on the outside, tender on the inside and made using only 3 ingredients. A delicious way to shake up your potato game!

I’m not kidding when I say these air fryer potato wedges are CRISPY! Well, crispy on the outside but perfectly tender on the inside — the ideal potato wedge if you ask me. 

At this point, I’ve made my fair share of air fryer recipes, like my air fryer chicken thighs and my air fryer scallops, but I don’t know why it’s taken me this long to give potato wedges a shot. 

Potatoes are my love language, and if they’re yours too, you MUST give this version a try.

Ingredient notes:

Potatoes: You only need 1 russet potato, though if you want to double this recipe you can. One sliced potato should be able to fit into your air fryer all at once, so the potatoes will be done and ready to eat at the same time. 

Olive oil: Or sub avocado oil 

Seasoning: The fun part about this recipe is that you can use almost any seasoning and these will be delicious. I used garlic herb seasoning (my fave!), but other ideas are: za’atar, a combination of garlic powder and smoked paprika, salt and pepper (if you want to keep it simple), and SO many more options!

Step-by-step instructions 

Step 1: Slice the potato. Scrub the potato to remove any dirt, then pat it dry. Slice it into wedges and place them into a large bowl. 

Step 2 (option 1): Add oil and spices. Next, drizzle oil and sprinkle the spices over the potatoes, then use a large spoon to stir so that they’re completely coated. 

Step 2 (option 2): Soak the potatoes. Soaking the potatoes will result in a slightly crispier potato wedge. To do so, simply fill the bowl with the potato wedges up with water so they’re covered, then let them sit for 30 minutes. Once the time is up, strain the water, then drizzle the wedges with oil and the seasoning.

Step 3: Add potatoes. Whether you chose to soak the potatoes or not, now you can place the potato wedges in your air fryer in a single layer, making sure they don’t overlap. If the potatoes are touching too much, they won’t cook properly and therefore won’t be as crispy.

Step 4. Air fry. The final step is to air fry the potato wedges at 400° for 20 minutes, using kitchen tongs to flip halfway through.

FAQs

Should you soak the potatoes ahead of time?

Short answer: maybe! I know, not helpful. Here’s the thing: I love a good shortcut, I really do. But, soaking the potato wedges does result in a crispier potato. So, if you have the time I say yes, but if you’re in a pinch these are still delicious even without soaking. 

Oh and in case you’re curious, the reason for soaking potatoes is that it removes excess starch. 

How should these be stored?

Store cooked potatoes in a sealed container in the refrigerator for up to 3 days.

But to be honest, air fryer potato wedges taste best fresh! If you store them, they simply won’t be as crispy the next day (unless you throw them back into the air fryer, which you can do, just be careful not to overcook them).

Ingredients 

  • 1 russet potato, large
  • 1 tbsp olive oil
  • 1/2 tsp garlic herb seasoning, or seasoning of your choice
  • nonstick spray
  • parsley or shredded parmesan for serving, optional

Instructions 

  • Rinse and scrub the potato, removing any dirt, then pat it dry. Use a sharp knife to slice it in half length-ways, then slice it into potato wedges.
  • Place the potato wedges into a large bowl. Next, you can do one of two things: 1) soak the potatoes or 2) skip the soaking step and begin cooking them. Soaking the potatoes results in a slightly crispier potato wedge, but if you're in a rush, you can skip this step.
  • To soak, simply fill the bowl with the potatoes up with water and let the potatoes sit for 30 minutes. Then, drain the water out, drizzle them with oil and seasoning and stir so they're coated. If you skipped the soaking step, you can just add the oil and seasoning and stir to combine.
  • Spray your air fryer with nonstick spray, then add the potato wedges in a single layer, making sure they don't overlap. Air fry them at 400° for 15-20 minutes, using kitchen tongs to flip them half way through.
  • Optional: sprinkle potatoes with fresh chopped parsley and/or grated parmesan and enjoy!

*Prep time varies; if you soak the potato wedges ahead of time, it’s more like 35 minutes; if you don’t, the prep time is 5 minutes

    My daughter and I tried this recipe and swapped the white potatoes out for sweet and they turned out so crispy. We liked the idea of soaking potatoes beforehand. Very simple to make!! #taecookingchallenge

    These are delicious and so perfect with anything grilled. I have made this recipe with both white and sweet potatoes and they come out perfect every time. If I am in a rush, I put the whole potatoes in the microwave for a few minutes then cut into wedges and proceed with the air fryer method. It shaves off some time and they still come out deliciously crispy. I also have tossed them with pesto before frying – also delicious!
