These 35-minute Air Fryer Hasselback Potatoes taste as good as they look! Seasoned with melted butter and simple herbs and spices, the mouthwatering flavors are always crowd-pleasing while the crispy skin leaves you wanting more.

Life is too short for boring baked potatoes. These Air Fryer Hasselback Potatoes are much more fun and exciting! They’re buttery, crispy, and seasoned with savory herbs and spices.

What makes hasselback potatoes so special is their accordion-style flair. Picture perfectly sliced Russet potatoes with crispy skins and soft and fluffy insides. Personally, I love to season them with butter and savory seasonings, but you can have a little more fun by putting your own spin on the flavors.

Last but not least, the air fryer comes to the rescue when cooking these extra fancy baked potatoes. It circulates hot air around the spuds, ensuring crispy skins and soft insides without needing more than a couple of tablespoons of oil. Just like my air fryer sweet potatoes, it’s a superstar at giving these potatoes the BEST texture.

Ingredients

Russet potatoes – These starchy potatoes are best for homemade hasselback potatoes. When cooked, the inside becomes fluffy and pillowy soft while the outside crisps up nicely. Yukon Gold potatoes are also a good choice if you don’t have Russet’s.

Melted butter – This is the secret to beautifully moist, golden, and rich-tasting potatoes. Use non-dairy butter if you’re vegan or want to keep this recipe dairy free.

Seasonings – I infused the melted butter with garlic powder, smoked paprika, salt, and black pepper, but there’s a lot of flexibility when seasoning these potatoes. Scroll down to the Variations section for more delicious ideas.

Garnish – I like topping hasselback potatoes the same way as a regular baked potatoβ€”with chopped fresh chives and sour cream!

Step-by-step instructions

Step 1: Slice. Wash the potatoes and cut them into about ΒΌ-inch slices, leaving some space at the bottom (don’t cut all the way through).

Step 2: Season. Whisk the butter and seasonings together in a bowl. Drizzle half of the mixture on top and between the potato slices.

Step 3: Air fry. Place the potatoes in the air fryer and cook for 15 minutes. Then, brush the potatoes with the remaining butter mixture and continue cooking until they’re fork tender.

Step 4: Serve. Serve the potatoes hot from the air fryer and top them with sour cream, chives, and any other toppings you like. Enjoy!

Tips and FAQs

  • It’s best to use a sharp knife when cutting the potatoes because it will help you make thin and even slices without cutting all the way through.
  • Cook the potatoes in batches to avoid overcrowding the air fryer basket. When there’s room left in between the potatoes, they’ll crisp up beautifully and cook evenly throughout.
  • The cooking times may vary based on the size of the potatoes and your air fryer model. Check the potatoes periodically and adjust the cooking time as needed.

Place two chopsticks on both sides of the potato while you’re slicing. The chopsticks act as β€œstoppers” to help you avoid slicing to the bottom.

Variations

  • Garlic and herb Mix chopped fresh rosemary, thyme, parsley, and minced garlic with the melted butter to brush over the potatoes. 
  • Lemon herb – Combine lemon zest, lemon juice, and chopped fresh herbs (or Greek or Italian seasoning) with melted butter for a bright and refreshing flavor profile. 
  • Make it cheesy – Try sprinkling grated cheddar, mozzarella, or Parmesan cheese between the slices for a gooey finish. 
  • Pesto potatoes – There’s nothing better than potatoes brushed with almond pesto, kale pesto, or sun-dried tomato pesto and topped with Parmesan cheese and red chili flakes.
  • Loaded hasselback potatoes – Use classic loaded baked potato toppings, like sour cream, chives, cheese, and bacon bits after cooking.

Should you peel the potatoes?

It’s up to you. I find that the peels help the potatoes stay intact and give them an extra layer of texture and a rustic appearance. If you prefer a smoother, more uniform look, go ahead and peel the potatoes. 

Can you make hasselback potatoes with sweet potatoes?

Yup! Follow the same steps in the recipe card to make hasselback sweet potatoes in the air fryer, but swap the savory seasonings for a dash of cinnamon, nutmeg, and a drizzle of maple syrup.

How long does it take to cook hasselback potatoes in the air fryer?

I found that the potatoes took around 25 to 30 minutes to cook to soft and pillowy perfection in a 375ΒΊF air fryer.

What goes well with this dish?

Hasselback potatoes’ crispy exterior and tender interior make them a show-stopping companion to hearty and meaty main dishes, such as air fryer steak bites, chicken meatloaf, and air fryer lamb chops. Complete the meal with more roasted vegetables, like honey roasted parsnips, broccoli, or air fryer carrots.

Storage

Refrigerator: Let the leftover hasselback potatoes cool to room temperature before storing them in an airtight container in the refrigerator for 2 to 3 days.

Freezer: Lay the cooked and cooled potatoes in a single layer on a baking sheet and freeze until they’re solid. Transfer the frozen potatoes to an airtight container or bag and freeze for 2 to 3 months. Keep in mind that their texture may change slightly upon thawing.

Ingredients 

  • 2 large russet potatoes
  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • chopped chives and/or sour cream for garnish

Instructions 

  • Preheat the air fryer at 375 F.
  • Cut the potatoes into about ΒΌ inch slices leaving some space at the bottom (make sure not to cut all the way through the potatoes).
  • In a bowl, mix the butter, garlic powder, smoked paprika, salt, and pepper together. Add half of the mixture on top and in between the cracks of the potatoes.
  • Add the potatoes to the air fryer and cook for 15 minutes. Then brush the remaining oil mixture to the potatoes and cook once again for 10-15 minutes or until the potatoes are fork tender.
  • Serve immediately with sour cream, chives, and more seasonings if desired. Enjoy!
