Happy Cinco de Mayo week!! I know everyone in the blogosphere is going crazy with tacos and enchiladas all week long, but I gotta say this lavender margarita is my only real Cinco de Mayo recipe. Forgive me? 

You guys know I’m obsessed with lavender, and I’ve come to learn that as individuals, we either love it or can’t stand it. I’ve heard plenty of people make the argument that lavender-flavored food tastes like flowers, whereas my tastebuds completely disagree. To me, lavender foods and drinks are refreshing and light with a mild flavor, which is exactly how I’d describe this margarita.

When cooking with lavender, you’re going to want to use culinary lavender. For anyone who is local to the Pittsburgh area, I found some at a tea shop in the Strip District. If you’re not local to the area, just call around to different tea shops and see if they sell it (side note: I’m a huge fan of calling stores first, which seems a little nerdy but is way better than driving around to a bunch of places like a crazy person). 

Once you’ve got your culinary lavender, you’re ready to make the lavender simple syrup, which is simply lavender, water and sugar. YUM. The rest of the drink is simply your favorite tequila, sparking water and fresh lime juice. Easy peasy!

Tip: allow the lavender to steep for at least 30 minutes before straining it. That way, the simple syrup has time to soak up the lavender flavor. The first time I made this I made the mistake of straining right away and the simple syrup barely tasted like lavender.

Ingredients 

  • 2-3 tbsp lavender simple syrup
  • 1 oz. Altos Plata Tequila
  • Juice of 1/2 lime
  • Sparkling water

For the lavender simple syrup:

  • 1 cup water
  • 1 cup granulated sugar
  • 2 tbsp culinary lavender

Instructions 

  • Start by making the simple syrup: add water, sugar and lavender to a saucepan and bring to a boil. Once boiling, reduce to a simmer for one minute and then remove mixture from the heat.
  • Allow lavender to steep for approximately 30 minutes before pouring mixture through a fine mesh strainer.
  • To make the margarita: add ice and 2-3 tbsp* of the lavender syrup to a glass; add the tequila and lime juice, and then fill the glass up with sparkling water.
  • Enjoy!

    This is a delicious recipe! My sister in law got me some lavender from Hope Hill Lavender Farm in north eastern-ish PA. I’ve been looking around for recipes to use with my simple syrup. Lavender matcha lattes are also awesome to DIY, but this margarita is PERFECT for summer!
