This carrot juice cocktail is super refreshing and made with carrots, ginger, tarragon and your choice of tequila or vodka.

After trying this carrot juice cocktail, you’ll never look back! In my opinion, orange juice and carrot juice are the tastiest juices out there. Sure, there’s the celery juice crazy going on right now, but let’s be honest, carrot juice is way better. Whenever I find myself at a juice shop, it’s almost always the ginger carrot juice that catches my eye and that I ultimately end up buying. I figured the only thing better than refreshing and healthy carrot juice is a tequila carrot cocktail (right??).

  • carrots
  • fresh ginger
  • tarragon
  • sugar
  • tequila or vodka
  • Optional: egg white for texture

HOW TO MAKE CARROT JUICE

There are two ways to make the carrot juice for this cocktail. One is slightly better than the other, but the other is faster, so you can take your pick. Personally, if I was making this drink for Miguel and myself, I’d probably use the blender method. But, if I was making it for guests to try, the stovetop method would be the way to go. 

Stovetop method: this method takes longer to prep but results in pure carrot juice without any pulp. For the stovetop method, you’ll grate carrots on a box grater into a saucepan, then add the ginger, tarragon, sugar, and water. You’ll want to boil the mixture, then simmer it for about 20 minutes. Finally, you’ll pour everything through a fine mesh strainer into a cocktail shaker and add the alcohol and optional egg white, shake it up, and viola! This is the method I’m going to include in the recipe instructions. 

Blender method*: with this method, you’ll essentially place all of the ingredients—minus the alcohol—into a blender, blend everything up for one minute, then pour the mixture through a fine mesh strainer. Then, you can add however much alcohol you want to it. The downside to this method is that, even when you run the mixture through a strainer, there may be some carrot pulp that still gets into the drink. I recommend this method if you’re in a time crunch; otherwise, go with the stovetop method. 

*if you own a juicer, that works too and is even faster and better than a blender

Ingredients 

  • 4 carrots
  • 1" piece fresh ginger
  • 3/4 tsp dried tarragon
  • 2 tbsp sugar
  • 2 1/2 cups water
  • 3 oz. tequila, or vodka
  • 1 egg white, optional

Instructions 

  • Use a box grater to grate carrots over a saucepan. Then, add ginger, tarragon, sugar, and water to the saucepan.
  • Bring mixture to a boil, then simmer for 20 minutes.
  • Pour mixture through a fine mesh strainer into a bowl, allowing it to cool before using.
  • Before serving: pour carrot juice into a cocktail shaker, then add tequila/vodka and an egg white. Shake it up, then pour it into glasses.
  • Enjoy!

Notes

-Can use tequila OR vodka -- whatever your preference is
