These Blackberry Thyme Margaritas are made with a blackberry simple syrup, tequila, lime juice, and a little sparkling water and are a refreshing way to enjoy your favorite cocktail!

It’s officially margarita season, so don’t mind sharing this delicious blackberry thyme margarita wit you!

Though my skinny margarita recipe is my go-to, I adore adding fresh fruit to my cocktails, which really makes them scream SUMMER. There’s my mango margarita, and now this recipe which utilizes blackberries and is so refreshing.

Plus it’s the weekend, so drink up!

Ingredient notes:

Tequila: I’m partial to blanco tequila, but you can use whatever you have on hand.

Simple syrup: In this case, a mixture of blackberries, fresh thyme, sugar, and water. You can use fresh or frozen blackberries — both will yield similar results.

Lime juice: I always have fresh limes in my refrigerator, so I’m partial to using freshly squeezed lime juice in my cocktails. Plus, many pre-made lime juices are sweetened, and this drink is already sweet enough.

Sparkling water: Plain, any kind! You’re going to top each drink off with a little sparkling water.

Method

Step 1: Make the blackberry simple syrup. Begin by adding all of the syrup ingredients — blackberries, thyme, sugar, and water — to a small saucepan and bring to a boil. Then, reduce the heat to a simmer and simmer the syrup for 10 minutes, using a wooden spoon to break down the blackberries.

Step 2: Allow the syrup to cool. Remove the saucepan from the heat and pour the syrup through a fine mesh strainer. Allow the syrup to cool to room temperature before using it.

Step 3: Add everything to a cocktail shaker. For two servings (two drinks), you’ll add 4 oz. tequila, 3 tbsp lime juice and 1/4 cup of the blackberry simple syrup to a cocktail shaker, then shake it up and pour over ice. Then, top each glass off with a little sparkling water.

Tips and tricks

-I like this drink because the syrup can easily be made with fresh blackberries if they’re in season, or frozen if you want to make this during the fall/winter.

-The thyme pairs really well with the blackberries, but if you have to omit something, you can omit the thyme. Do NOT use dried thyme — fresh is the way to go.

How far in advance can the simple syrup be made?

You can prep the syrup up to 1 month in advance — just make sure to store it in the refrigerator! I typically prep mine 1-2 days beforehand; that way, it’s ready to go for when I want to make the drink but still very fresh.

What if I don’t like blackberries?

….then this drink probably isn’t for you 😉 Give my mango margarita, lavender margarita or pineapple ginger punch a try instead!

Any snacks to pair with this cocktail?

I think my guacamole salsa, bacon guacamole and/or my fried tomatoes with corn salsa would both pair really well with this drink.

Ingredients 

for the simple syrup:

  • 6 oz. 1 cup blackberries, fresh or frozen
  • 2 sprigs fresh thyme
  • 1 cup water
  • 1 cup granulated sugar

for the margaritas:

  • 1/4 cup blackberry simple syrup
  • 4 oz. tequila
  • 3 tbsp lime juice
  • Sparkling water

Instructions 

  • Begin by making the simple syrup: add berries, thyme, water, and sugar to a saucepan and bring to a boil. Then, reduce heat to a simmer and simmer for 10 minutes, using a wooden spoon to break down the blackberries.
  • Remove saucepan from the heat and pour the mixture through a strainer and into a pitcher; discard the blackberries. Allow the syrup to cool to room temperature before using it.
  • For the margaritas: Salt the rim of 2 glasses (optional) and fill each one with ice. Add tequila, lime juice and 1/4 cup simple syrup to a cocktail shaker and shake for 15 seconds. Pour into the glasses, then top them off with sparkling water. Enjoy!

*You can prep the simple syrup ahead of time and store it in the refrigerator until you're ready to use it

    Great recipe. Living in Mexico (Puerto Vallarta) only a couple of hours drive from the town of Tequila, I always have that part of the recipe on hand. A quick trip to Costco will yield some blackberries and I’m set. I already grow the thyme.
