This 6-ingredient Almond Butter Cauliflower Smoothie is made without banana and is creamy, filling, and so tasty! The cauliflower taste is undetectable, helping you enjoy every sip of blended almond butter, dates, cinnamon, and vanilla.

Cauliflower isn’t just for roasting or turning into rice anymore! Did you know that frozen cauliflower is one of the best vegetables you can blend into a smoothie? It’s true and it’s amazing! Similarly, I love adding secret ingredients into recipes (looking at you, black bean brownies).

This Cauliflower Smoothie is a perfectly balanced treat featuring healthy fats, protein, fiber, and vitamins. Plus, it’s vegan-friendly! You can’t even taste the cauliflower thanks to the naturally sweet dates, warming cinnamon, and nutty almond butter.

Cauliflower smoothie recipes are typically made with frozen cauliflower, and this recipe is no different. Above all, you’ll avoid the earthy vegetable flavor of raw cauliflower while still reaping all of the nutritional benefits.

Ingredient notes:

  • Cauliflower – I strongly recommend you make this smoothie with frozen cauliflower or frozen cauliflower rice. I tested the recipe with fresh (non-frozen) cauliflower and it makes the smoothie taste way too much like cauliflower. Frozen provides the same health benefits but a milder flavor. 
  • Almond milk – Or any dairy free milk or regular milk you like.
  • Pitted dates – For a sweet taste without the added sugar. Make sure to use less than what’s in the recipe if you’re using large Medjool dates.
  • Almond butter – Peanut butter, cashew butter, or seed butter work just as well.
  • Warm flavors – Cinnamon and vanilla help the smoothie taste warm and comforting.

Step-by-step instructions

Step 1: Add to a blender. Add all of your ingredients to a blender.

Expert tips and FAQ

  • This smoothie is on the sweeter side. Feel free to omit the dates or use less if you’re not a fan of the sweet flavors. Or, whip up my espresso smoothie and add frozen cauliflower to it.
  • Want this to be a chocolate cauliflower smoothie? Try adding one tablespoon of cocoa powder to the blender.
  • To make the smoothie even bulkier and filling, add half of a frozen banana.
  • Turn this into a protein smoothie by adding a scoop of your favorite protein powder.
  • Add-ins: I love adding MORE to my smoothies to make them even healthier. If you want to do the same, try adding chia seeds, flaxseed, spinach and/or rolled oats to the blender.

Can you taste the cauliflower in smoothies?

Not at all! Just like raw spinach, frozen cauliflower and cauliflower rice blend right into the smoothie.

What are the health benefits of cauliflower?

There are many nutritional benefits, including that it’s high in fiber and low in calories. Additionally, it’s a filling and nutrient-dense vegetable that becomes super creamy in smoothies without affecting the overall flavor.

Frozen vs. fresh cauliflower?

This recipe needs to be made with FROZEN cauliflower florets or cauliflower rice to achieve a smooth consistency and mild flavor. Using raw, fresh cauliflower will make your smoothie taste like vegetables, and we don’t want that.

Ingredients 

  • 1 cup almond milk
  • 1 cup cauliflower, frozen
  • 5 dates, pitted; see notes
  • 3 tbsp almond butter
  • 1 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch of salt

Instructions 

  • Add all ingredients to a blender and blend until smooth. Enjoy!

*Calories are per serving and are an estimation
*DATES: if you’re using deglet dates, use 5; if you’re using medjool dates, use 2 or 3 because they’re larger in size
*Add-ins: want to bulk this up? Try adding 1/2 a banana and a scoop of your favorite protein powder; it’s also delicious with 1 tablespoon of cocoa powder
*Make sure to use FROZEN cauliflower/cauliflower rice, not fresh cauliflower. Fresh cauliflower has an overpowering flavor, whereas frozen is undetectable

    This was surprisingly good! I’ve never used frozen cauliflower in a smoothie, and it turned out better than I expected! I usually do frozen banana in smoothies and I liked the lightness of the cauliflower. I used 2 medjool dates and it was perfectly sweet for me.

    So do you freeze fresh raw cauliflower or do you buy the ones in the freezer which I believe have been cooked then frozen??
