When is WordPress going to allow you to start singing your intros? I think that’s the only way I can make mine more interesting. Seriously, I just wanted to start with “a savory dish, for you and for meeeeeeee”. Why. WHY. I want to sing my intros and it’s just not the same typed out.

Ok we’re done. THANK YOU times a million for your sweet words on yesterday’s post. With hard work and determination, we can all achieve our dreams. ….especially if those dreams involve SOBA NOODLE. Aw man, talk about a transition. Oh well, it happened so..let’s move on.

Are you a planner? You know, a life planner/day planner/weekend planner/event planner/etc.? Do you enjoy planning out your day/life, or are you more of a go-with-the-flow type of person? I’m a planner in some respects and a fly-by-the-seat-of-my-pants on others. Every night, I plan out what I’m going to do the next day. However, sometimes my plan doesn’t go as planned and I stress out about it.

I think you have to plan in order to be productive, but it can also make a person (um me HI) a bit too rigid at times. Stuuuuupid example: yesterday after barre class my friend asked if I wanted to walk with her to get a smoothie. The FIRST though that popped into my brain was um well uhhhhh ya see I had planned to go home and get started on this recipe right away soooo I probably shouldn’t. <—so so so dumb. I quickly got it together enough to reply “sure” and we got a smoothie and it took 10 minutes and life went on. BUT THAT ACTUALLY HAPPENED. I actually had to think twice about it because going to get a smoothie wasn’t part of my “plan”. My brother is the same way. Justin, if you’re reading this, stop being so serious about your plans (unless they include me then you should be very serious about your plans). Thanks love you bye.

Speaking of plans, sometimes I plan out recipes and they just don’t turn out the way I had planned (I swear I’m not trying to overuse “plan”—it’s just happening that way). Do you remember when I Instagrammed this photo and everyone was like I NEED THAT RECIPE NOW?! Yeah well this is that recipe. I know I know—wheres’ the soft boiled egg? Turns out, even though I love eggs, they didn’t really go well with this recipe. They looked nice and in theory they would have been delicious, but they just tasted…weird..and they stood out too much. So I remade the recipe sans egg and substituted broccoli for edamame and BOOM, so much better. The combination of tahini, sesame seeds and cane sugar is pure bliss in my opinion, and creates a somewhat sweet sauce for these noodles.

Though not pictured, I ended up enjoying these black sesame soba noodles with honey-glazed shrimp (i.e. cooked shrimp marinated in honey). Talk about delicious! Whether you eat these noodles with or without the shrimp, I have a feeling you’re going to love them.

Ingredients

  • 1 package soba noodles, approx. 8 oz
  • 1 head of broccoli
  • 1/4 cup black sesame seeds
  • 1/2 cup sesame seed oil
  • 2 tbsp cane sugar, or white sugar
  • 2 tsp mirin*
  • 2 tbsp tahini
  • Sesame seeds and avocado for garnish

Instructions

  • Bring a pot of water to a boil and cook soba noodles.
  • Place broccoli in a separate pot with water and bring to a boil.
  • While the noodles and broccoli are cooking, make the sauce. Do so by heating the sesame seeds and 1/4 cup of the sesame oil in a skillet over medium heat. As soon as the seeds start sizzling a bit/becoming hot, transfer to your blender.
  • Add the rest of the sesame oil, sugar, mirin, and tahini to your blender and pulse until everything is mixed together really well.
  • Drain your noodles and broccoli and put them in a large bowl; pour the sauce overtop and mix everything together.
  • Garnish your dish with extra sesame seeds and avocado.
  • Enjoy!

Notes

*If you don't have mirin on hand, you can use rice vinegar instead

I’m the same way with planning things out. I probably would have said no because I am super rigid about it so kudos to you for going with the flow.

This recipe looks like a delicious quick and easy dinner. I can see how the egg would over power it. It looks perfect just the way it is!

I’m a total planner. I would’ve thought twice about getting that smoothie, too. If I don’t have pressing deadlines, I’m a little better about letting my schedule get a little looser, but I could stand to lighten up a little. 😛 And also, I love sesame oil in pretty much any capacity, so these noodles are kiiiind of screaming at me to make ’em.

Haha let’s both work on being a little more chill with plans…. maybe 😀
