  • The bacon is optional — seriously, I know that’s the point of this recipe, but it’s not vital at all and is delicious with or without it
  • Guacamole is the perfect appetizer or snack, and can even be eaten as a side with chicken fajita pasta or slow cooker beef tacos.

The complete ingredient list is in the recipe card, though I do want to provide further context for a few ingredients.

  • Avocado – Always use ripe avocados because 1) they taste better and 2) they’re easier to mash when they’re ripe.
  • Pepper – JalapeƱo or serrano. I first tested it with serrano, but the grocery store near my house only had jalapeƱo peppers. Turns out, both work out great!
  • Cilantro – The recipe calls for roughly chopped cilantro because I prefer larger chunks of it rather than minced cilantro. This is a personal preference, and it’s ultimately up to you to decide how you want to chop it.
  • Bacon – If you want to keep this recipe Paleo/Whole30, be sure to use bacon with minimal ingredients and zero grams of sugar.

How to make bacon guacamole

Step 1: Cook the bacon. Cook it over the stove or in the oven, then wait for it to cool a bit before breaking into small, bite-size pieces.

Step 2: Mash the avocado. Place the avocados into a bowl, along with the lime juice, and use a fork to mash them.

Step 3: Add tomato, onion and pepper to the bowl. 

Step 4: Stir in the cilantro, bacon and salt.

Tips and FAQs

  • If you prefer a chunkier guacamole (like me!), it shouldn’t take more than 30 seconds to mash the avocado. If you want a creamier guacamole, simply spend a little more time getting the lumps out with your fork.

How should I store this?

Storing guacamole can be a bit tricky, but it’s doable! First, scoop the guacamole into a large enough bowl, then squeeze lime (or lemon) juice all over the top of it. Then, place plastic wrap over the bowl and press down so that the wrap is in contact with the guacamole. This should allow the guacamole to stay fresh in the refrigerator for up to 48 hours without browning. Need more tips? Check out this post on how to keep guacamole from browning.

  • Browning guacamole: if you followed the above steps and it still turned brown, simply use a fork to stir it, which will remove the top brown layer. However, if it’s several days old, it’s probably not good anymore.

Ingredients 

  • 2 slices bacon, cooked
  • 3 ripe avocados
  • 2 tbsp lime juice
  • 1/2 cup tomato, diced
  • 1/4 cup red onion, diced
  • 2 tbsp serrano or jalapeƱo pepper, diced and seeds removed
  • 1/3 cup cilantro, roughly chopped
  • salt to taste

Instructions 

  • Cook bacon in a skillet over stovetop. Once bacon is done cooking, place on a paper towel and allow a few minutes for it to cool before breaking it into small, bite-size pieces.
  • While bacon is cooking, dice onion, tomato and pepper and set aside.
  • Place avocado in a bowl, add lime juice and then mash the avocados with a fork.
  • Stir in onion, tomato and pepper.
  • Last, stir in cilantro, bacon and salt.
  • Serve with chips and enjoy!

Notes

Storage: storing guacamole can be tricky because it browns quickly, but have no fear because it IS doable! Once the guacamole is in a bowl, squirt a hefty amount of lime (or lemon) juice on top, then place a piece of plastic wrap over the bowl and gently press down so that it’s touching the guacamole. Store in the refrigerator for up to 48 hours.Ā 
-Want to keep this meat-free? Omit the bacon! The bacon is delicious, but not an absolute “must” for this recipe (yes really!)
